tasty tuesdays

 I'm doing this new thing. every Tuesday
things that i make, buy, whatever. that's delicious
today its
SPANAKOPITAKIA
a patient that i took care from Greece had a great conversation about Greek food.
i have tried some dishes and they are yummy.
the next day at work, they gave me a Greek recipe book that they sell at the Greek festival downtown.
so today i took advantage of the recipe book and made something.
take a look for yourself



ingredients:
1 pound of FETA
1 pint of COTTAGE CHEESE
1/4 cup PARMESAN CHEESE
1 cup of SWISS CHEESE, grated
4 EGGS
10 GREEN ONIONS, chopped
10 ounces FRESH SPINACH, finely chopped
1 teaspoon PARSLEY, minced
1 pound FILO PASTRY
1 pound BUTTER, melted

combine all cheeses, eggs in a large mixing bowl
add onions, spinach and parsley
blend well

cut filo pastry into strips 2 1/2-3 inches wide.
brush strips with melted butter then place a teaspoon of mixture onto strip
fold one corner over into a triangle then continue folding over (like folding a flag)
place each triangle on a cookie sheet
bake at 350* for 20-25 minutes, until golden brown

serve hot
