pork... i mean chicken tacos with chili verde

guess what?
i made dinner!
i am turning into a betty home maker without the husband and children.
weird.
the recipe calls for pork, but i only eat red meat on sundays. annnd i dont know how to cook red meat.
i pulled the recipe from my our best bites recipe book.

here is what you need 
 
2-3 tablespoons extra-virgin olive oil
2 pounds boneless chicken // chopped in cubes
2 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
1 large onion // minced
5-6 garlic cloves // minced or pressed
1 1/2 pounds of tomatillos // husked, quartered
2 green peppers // chopped
1-2 jalapenos // seeded, membranes removed
1/2 bunch cilantro // coarsely chopped
4 cups chicken broth
1 1/2 teaspoons cumin
2-3 tablespoons sugar 

// step one //
in a large saucepan or stockpot // heat olive oil over medium heat // add the chicken cubes // add season with 1 teaspoon salt // 1/4 teaspoon pepper / add onion // add garlic // cook // stir frequently until tender and fragrant
// STEP TWO //
while onions are sauteing // combine tomatillos // green pepper // jalapenos // cilantro // in a blender // process until smooth
// STEP THREE //
pour tomatillo mixture over chicken // add chicken broth // add salt // add pepper // and cumin // add sugar // simmer for 30 minutes to 1 hour // depending on the consistency you want
// FINISHED PRODUCT //
i didnt have salsa, guacamole or sour cream on hand. without it was great. with it would make it even better.
hey less calories means healthier right?

last week i made my first tofu dish
it was quite delicable

Savory Orange-Roasted Tofu and Asparagus
it was pretty easy to make and didnt take much time 
all you need
a package of EXTRA firm tofu

 red miso

 balsamic vinegar
virgin oil
asparagus

fresh basil
orange juice
&
orange zest

finished product
yummy
