sunday dinner

  about a month ago my mom decided once wilson left on his mission, she wanted nathan and i to make dinner once a month. last sunday i was suppose to but i was too busy being a "fake mom" that i never got around to looking at recipes. i wanted to make something healthy because my parents, especially my dad are health nuts for the moment. so red meat was out of the question, plus i dont like red meat. im a fish/chicken kind of gal. so i looked and looked and it dawned on me. fish tacos. so fish tacos it was. i remembered having really good fish tacos at my sisters, sisters in laws. so i asked meghann and got the recipe. its pretty simple to make and very delicious.


FISH TACOS.

                                 the fish:
                                            1lb. of Tilapia 
                                             blackened seasoning (i used cajun blackened seasoning)

coat fish in blackened seasoning. in a large skillet heat up some vegetable oil and cook fish until cooked through and slightly brown or when its starts to flake off

                                  filling/sauce:
                                              1/4 cup of sour cream
                                              2 Tablespoons lime juice
                                              1/4 red cabbage (thinly shredded 2 1/2 cups)
                                               4 green onions (chopped)
                                               1 jalapeno (seeded and diced)
                                               8 flour tortillas 
                         (i used the ones that you have to cook from costco, i think they taste better)

combine in a small bowl, sour cream and lime juice. season with salt and pepper. set aside
combine in a large bowl, cabbage, green onions and jalapeno
add half of the sauce to the cabbage mixture.
warm tortillas over gas burner until blistered in spots
add fish, cabbage and extra sauce (if desired) to your tortillas.
